MILLET CAKE

Wegański jagielnik Celiko.

INGREDIENTS

 

INGREDIENTS FOR THE BOTTOM OF THE CAKE:

  • 200 g dates
  • 2 tbsp coconut shavings
  • 2 tbsp gluten-free oat flakes
  • 30 g Celiko Natural Cacao Natura cocoa
  • 200 g almonds

INGREDIENTS FOR MILLET BATTER:

  • 1 cup millet
  • 100 g almonds
  • 50 g sugar
  • 1 tsp Celiko vanilla sugar
  • 3 cups water

INGREDIENTS FOR THE TOPPING:

  • 200 g dates
  • salted peanuts

STEP 1

Prepare the bottom of the cake. Pour boiling water over 200 g of dates and wait 15 minutes. Put the remaining ingredients into a bowl and blend. Then pour in 2 tablespoons of the water in which the dates were and add the dates drained from the rest of the water – blend the whole thing until the ingredients are combined. Spread the resulting mixture evenly on the bottom of a cake pan with a diameter of about 20 cm.

STEP 2

Pour 3 cups of water, sugar and vanilla sugar into a pot, pour in the millet and chopped almonds. Stir the whole thing and cook until all the water is absorbed. Cool the millet and blend it to a smooth paste. Spread it evenly on the previously prepared bottom.

STEP 3

Pour boiling water over the dates prepared for the topping (200 g). After 15 minutes, drain them from the water and blend. While blending, add the water in which the dates were soaking, a tablespoon at a time, until a spreadable mass is formed on the millet layer. Pour the topping over the millet layer. You can sprinkle the cake prepared this way with salted peanuts.
